As promised, here is a follow-up to our thoughts on the Grayling Farmer’s Market CANDY ONIONS. By the looks of it, as I mentioned before, it gave the impression that it would taste just like a regular old white onion. But, like every onion, the candy onion has many layers. We should not judge this onion by the outer layers, but cut deeper. 

Tonight’s dinner featured:

  • Assemble-your-own sub sandwich
  • Pickle salad (recipe below)
  • Potato chips

The candy onion seemed the perfect addition to this menu, so I sliced half of it for the sandwiches and diced the other half for the pickle salad. No tears were shed during the slicing and dicing. I snuck a taste and was surprised by the mild flavor and sweetness. Don’t get me wrong, there was still an oniony flavor, but it wasn’t the flavor that you can taste days later. It was pleasant. Macey and Reagan both liked the candy onion flavor. Chuck said he couldn’t taste the difference, but I don’t think he took the time to savor the flavor. 


Survey Says!

3 out of 4 McKeever’s approved of the flavor of the candy onion. Rating it as an onion that could be eaten on a date. One McKeever had no idea he was eating anything different, and so we have thrown out his survey response.


Pickles, Pasta, and Creamy Dressing Oh My!

Do you love pickles like our family? Need an easy and new pasta salad to wow your friends at your next potluck? Here is my twist on the Dill Pickle Pasta Salad: 

**Keeping it Real** Many of the “twists” I have added to this recipe were given to me by Chef Kevin Kelley. Thanks, Kevin, we love this pasta salad!

Dill Pickle Pasta Salad (10 servings)

Ingredients:

1 (14.5 oz) box of Barilla Protein+ Penne

1 cup diced dill pickles

2 cups mild cheddar cheese cubes

½ cup diced candy onion

3 tablespoons chopped fresh dill

1 cup mayo

¼ cup light sour cream

½ tablespoon garlic powder

½ tablespoon onion powder

Salt and pepper to taste

Procedure:

  1. Make the pasta according to the package directions. I always cook it the minimum time suggested (i.e., if the box says 8-10 minutes of cooking time, I cook for 8 minutes)
  2. While the pasta is cooking, dice the onion and chop the dill.
  3. Strain the pasta and rinse under cold water to stop the cooking process.
  4. Combine all ingredients in a bowl (I like using the Sterilite Ultra Seal), and mix.
  5. Chill in the refrigerator for at least an hour before serving.

The Book that I finished today:

Today’s book was a book that I listened to on Audible. I am a visual learner, and to focus and retain information, I have found that the best way for me is to look at what I’m reading. However, people were raving about audiobooks so much at my book club that I decided to give them a try. I was pleasantly surprised that I enjoy listening to books when I’m outside walking with the dog, or inside folding laundry.
